 Whitney Linsenmeyer

Whitney Linsenmeyer, PhD, RD is an Assistant Professor of Nutrition and Dietetics at Saint Louis University in St. Louis, Missouri. She serves as a National Spokesperson for the Academy of Nutrition and Dietetics with expertise in fad diets, culinary nutrition, and transgender health and nutrition. Dr. Linsenmeyer completed her Bachelor of Science in Nutrition and Dietetics, Dietetic Internship and Master of Science in Nutrition and Culinary Entrepreneurship, and Doctor of Philosophy in Higher Education Administration at Saint Louis University.

Dr. Linsenmeyer’s research expertise centers on gender-affirming nutrition care for the gender expansive population. She has published over 50 peer-reviewed journal articles and book chapters, and she presents on transgender health and nutrition nationally and internationally. Her current projects center on food insecurity and disordered eating in the transgender community, implementation a recreation-center based initiative to improve the safety and inclusion of transgender youth and their families, and the training of health professional students to provide excellent care for their future transgender patients and clients.

With a background in culinary nutrition, Dr. Linsenmeyer approaches food as a source of meditation, pleasure, and human connection. She believes that diet culture robs people of the satisfaction that a good meal offers and actively seeks to counter this with a joy-first approach to food. She loves cooking, baking, hot yoga, and waterslides.
